Being a capricious variety towards clima, it’s production is conditioned by grapes reaching of technological maturity. Grapes are subject to a ruthless selection from vineyard all the way to wine making, followed by a spared flux leaded by a reductive technology that aims to preserve the delicate and thin primary flavours of the variety.

Grapes are de-stemmed and not crushed. Only first quality, gravitationally-separated (without press) wine juice is used.
